The control of fire was the first and the greatest of humanity’s steps, towards a life-enhancing technology. Around the fire, we can expand too many topics. In ancient times, after the flames burn, people get some ashes. People inventive soap and glasses from ashes. And we also get some food creation from ashes, for example: lutefish is a traditional dish of some Nordic counties.
Today let us talk about an Chinese food which also inventive from ashes. It has many English name, some of them was quite fun preserved egg,hundred egg, century egg, thousand-year-old egg , and millennium egg, and so on. It might because when the foreigners came to China, and saw this food they don’t know why it looks so strange, and has black color. They think it may takes long time to be black, and had been made some really horrible choice(In fact, it just has a shelf life of there month, once you open, you have to eat it in three hours). But in China we call it ‘songhua dan’, ‘songhua’ is not means from the Songhua river, in Chinese it mean beautiful patterns like pin needles.
Century eggs can be eaten without further(once you open it, don’t leave it for long time), as a side dish. Or cut into chunks and stir fried with vegetables. Century egg and lean pork congee is also famous in China.
